Spiced Nuts and Seeds – 4 ways

Just a bit of prep to revitalise your desk at work. A handful of these will help to boost a range of good fats, vitamins and minerals, top-up your protein intake, and stave off hunger!

Chilli and Lime Cashew Nuts

Ingredients

500g cashew nuts
3 limes
1 pinch chilli powder
1 pinch cayenne powder
Salt

Method

  1. Pre-heat the oven to 150oc.
  2. Place the cashew nuts into a roasting tray. Zest and juice the limes and pour over the nuts. Add the chilli powder and cayenne pepper and a good pinch of salt to the nuts. Give the nuts a good toss.
  3. Bake in the oven for 15-20 minutes. Allow to cool before serving.

Moroccan Spiced Cashew Nuts

Ingredients

500g cashew nuts
1 orange
1 pinch cinnamon
1 pinch cumin
Salt
50g dried apricots
25g sultanas

Method

  1. Pre-heat the oven to 150oc.
  2. Place the cashew nuts into a roasting tray. Zest and juice the orange and pour over the nuts. Add the cinnamon, cumin and a good pinch of salt and give the nuts a good toss.
  3. Bake in the oven for 15-20minutes.
  4. Chop the apricots and mix with the nuts when they come out of the oven, toss in the sultanas and mix. Allow to cool before serving.

Honey and Chilli Nuts

Ingredients

100g hazelnuts
100g almonds
2 tbsp. honey
1 red chilli
1 stick rosemary
Salt

Method

  1. Pre-heat the oven to 150oc.
  2. Place the hazelnuts and almonds into a roasting tray. Pour over the honey and season with a good pinch of salt.
  3. Finely chop the chilli and rosemary and sprinkle over the nuts.
  4. Roast in the oven for 15-20 minutes. Once cooked allow to cool before serving.

Spicy Trail Mix

Ingredients

75g hazelnuts
75g almonds
75g macadamia nuts
2 tbsp. sunflower seeds
1 pinch cayenne pepper
1 tsp. smoked paprika
2 tbsp. honey

Method

  1. Pre-heat the oven to 150oc.
  2. Place the nuts and sunflower seeds into a roasting tray and pour over the honey. Sprinkle over the cayenne and smoked paprika and season with a good pinch of salt.
  3. Bake in the oven for 15-20 minutes. Allow to cool before serving.
