A new twist on an old favourite. A perfect recovery meal post-training with friends. Including options to reduce the carbs, if you haven't trained.

Hearty Protein Chilli

One serving for a big appetite or shared for a normal serving. Packed with protein, iron and Vitamin B12, needed to produce healthy red blood cells, to carry oxygen around the body.

Ingredients

75g diced braising beef
2 small cooking chorizo sausages
1 clove garlic
½ white onion
½ tsp. cumin
½ smoked paprika
½ tsp. cayenne pepper
½ tsp. cinnamon
100ml beef stock
1 tin chopped tomatoes
50g red kidney beans tinned
10g butter beans tinned
1 tbsp. olive oil
60g rice
1 handful baby spinach

Method

  1. Heat a large saucepan over a medium heat.
  2. Finely chop the garlic and onion. Roughly chop the chorizo sausage.
  3. Add the olive oil and beef to the saucepan along with a pinch of salt. Cook the beef until browned all over.
  4. Add the onion, garlic and chorizo to the beef and cook for a further 5 minutes.
  5. Add the cumin, cayenne, cinnamon, beef stock, kidney beans and butterbeans to the beef and bring to the boil. Add the chopped tomatoes and turn down to a gentle simmer and cook for 1 ½ hours or until the beef is tender. Once cooked adjust the seasoning and serve.
  6. Cook the rice, once cooked drain and fold in the spinach and serve.

Hearty Protein Chilli – with Cauliflower Rice

Your favourite chilli dish, but cutting the carbs! This dish comes with the added bonus of your RDA of Vitamin C - a great way to save money on your winter supplement!

Ingredients

Cauliflower Rice
6-8 cauliflower florets
¼ red chilli
1 small bunch coriander
1 tbsp. olive oil

Method

  1. Steps 1-6 from Hearty Protein Chilli.
  2. Chop the cauliflower into smaller pieces and place into a food processor. Pulse until it looks like small grains.
  3. Heat a sauté pan over a medium heat and add the olive oil. Add the cauliflower and chilli to the pan and cook for 3-4 minutes or until soft. Chop the coriander and fold into the cauliflower and serve.

Vegetable Chilli Con Carne Vegetarian

A tasty vegetarian version of our favourite chilli. A big portion best shared between 2 people. Not only a great Vitamin C provider, but great magnesium content to support muscle contraction and relaxation.

Ingredients

1 small sweet potato
1 tbsp. olive oil
1 tin mixed beans
1 tin chopped tomatoes
½ red chilli
1 garlic clove
½ white onion
½ tsp. cumin
½ smoked paprika
½ tsp. cayenne pepper
½ tsp. cinnamon
Water

Method

  1. Peel the sweet potato and slice into large chunks. Finely chop the red chilli, garlic and onion.
  2. Heat a large saucepan over a medium heat. Add the olive oil, along with the chilli, onion and garlic. Cook for 1-2 minutes without colouring.
  3. Add the sweet potato to the sauce pan, along with the cumin, paprika, cayenne and cinnamon.
  4. Add the beans and chopped tomatoes to the saucepan. Add a little water. Bring to the boil and turn down to a gentle simmer. Cook for 35-40 minutes or until the sweet potato is soft and the sauce has reduced.
  5. Season with salt and pepper and serve with cauliflower rice (directions above)
